Millet, not actually a grain but a seed, is naturally gluten free and a good source of nutrition. Millet seed is hulled, which means that the outer husk is removed. Millet is highly nutritious, non-glutinous and like buckwheat and quinoa, is not an acid forming food so is soothing and easy to digest. Just perfect as a porridge, mash, a rice substitute, as a side dish, in risottos, pilaf, salads, add to soups and casseroles, use in puddings, soufflés. Traditionally used as couscous (wheat product) substitute.
