Millet, not actually a grain but a seed, is naturally gluten free and a good source of nutrition. Millet seed is hulled, which means that the outer husk is removed. Millet is highly nutritious and like buckwheat and quinoa, is not an acid forming food so is soothing and easy to digest. Just perfect as a porridge, mash, a rice substitute, as a side dish, in risottos, pilaf, salads, add to soups and casseroles, use in puddings, soufflés. Traditionally used as couscous (wheat product) substitute.
